It’s fall folks and we have just a few short weeks before comfort food will reign again! So let’s focus this month’s Foodie FUNdraiser on some simple basic and balanced dishes to prepare ourselves for the onslaught of holiday cooking. Since we have begun our Raja Yoga series which also includes sharing about the science of Ayurveda and healthy yogic living, our main dish recipe this time will be Kitchari.

Kitchari is a fundamental staple in Ayurvedic kitchens, it can be dressed in so many delicious flavors. It can be made into breakfast food as well as dinner depending on how you spice it. But the overall effect is the same, a balanced neutral dish for all body types according to Ayurvedic science. Once I did a cleanse that was purely based on Kitchari. I ate it for two weeks straight! In the process, I came up with the 31 flavors of kitchari. It was a lot of fun and creativity.

So get ready to play with the wonders of Indian spices. You will need your spice arsenal of cumin, coriander, fresh ginger, nutmeg, cinamon, fennel, mustard seed, cardamon, clove, asafoetida and of course, turmeric. Also you’ll need some sort of dahl or lentil, and basmati rice/ quinoa. Then decide what favorite veggies that you’d like to add. Favorites are zucchini, potato, sweet potato, peas, and cauliflower. It is a veritable “raid what’s in the fridge” dish. Almost any veggie will work.

The other dish we will do is a simple dessert treat that is chocked full of healthy fats, protein, and sweetened in a way that won’t spike blood sugar. For our Dad’s Keto Chocolates you will need cacao, some sort of nut butter (peanut, almond, nutzo, etc), coconut oil, Monk Fruit/erythritol sweetener. You will also need a small multiple mold (1 inch) tin like for mini cupcakes.
Both of this month’s dishes are vegan too.
